Researchers from the University of Southern California and Oxford say they have found a correlation between countries that have high amounts of high fructose corn syrup in their food supply and those that have high rates of type 2 diabetes. Of the 42 countries studied, the US had the highest per capita consumption of HFCS: 55 lbs/year. Many countries had an annual per capita consumption of less than of one pound or less.
In a study examining adults between the ages of 18 and forty years and compared the effects of consuming 25% pf daily intake as either: high fructose corn syrup or glucose. Within two weeks the participants who consumed HFCS had increased levels of: LDL cholesterol, triglycerides and apolipoprotein-B(a protein which can lead to plaques that cause heart disease.
HFCS may be a factor in the obesity epidemic. There is a direct correlation between the increased use of HFCS and the increase of obesity rates.
